Banana Cream Chia Pudding (Gluten-Free and Family Friendly!)

Banana Cream Chia Pudding It’s nice to have a handful or two of easy go-to recipes that are super healthy, quick to make and can be taken on the go or enjoyed at home when life is busy. Nutrition during stressful periods of life is den more important and yet it’s usually neglected. This banana cream chia pudding is delicious, loaded with healthy fats, potassium and vitamin C. It resembles a banana cream pie without all of the extra sugar and wheat flour.

Ingredients: 
1/2 cup coconut milk
5 tbsp. white or black chia seeds
1 tsp. vanilla bean or extract
2 bananas, pureed
1-2 tsp. lemon juice
pinch of cinnamon optional

Instructions: Let chia seeds sit in coconut milk for about 5 minutes with vanilla bean. Mix in the banana puree, garnish with kiwi or other favorite fruit, you can also top with nuts and berries if you wish, or add a pinch of cinnamon instead.
