There is a plethora of recipes out there for chocolate and vanilla raw balls, and for other desserts.  Today I wanted to try something a little different. I created these balls because I wanted a sweet treat with a unique flavor that’s unlike anything else I’ve ever tried before.

The star ingredient is these little guys:

Mulberries are small berries, white or purple in colour, that pack a serious nutritional punch.  They are very high in the antioxidant resveratrol, which has been linked to breast cancer prevention, as well as life extension.  Mulberries are also fitting for the season, because they are known in Ancient Chinese Medicine as a blood tonic. This means that they help to clean the blood, which is good for your heart!

Aside from their many health benefits, these little berries are down right tasty!  They have caramel-like notes, which is what inspired the overall tone of this recipe.

Ingredients:

  • 1 orange – juice and zest
  • 1 tbsp Ground cinnamon
  • 1 tbsp raw carob powder
  • 2.5 cups desiccated coconut
  • ½ cup coconut sugar
  • 1 cup dates
  • 1 cup nut of choice – I used almonds
  • 2 cups mulberries
  • 1 tsp salt
  • 2 tsp vanilla extract.

Instructions:

Step 1: Begin by processing 2 cups of coconut in your food processor or blender until it becomes a thick butter.  This will take some time in your machine, but it will be worth it.

Step 2: Remove the coconut from your machine and coarsely chop your nuts.  Just enough to break them down a little.

Step 3: Use a knife or a food processor to coarsely chop your mulberries.

Step 4: Combine your coconut butter, coconut flakes, mulberries, nuts, coconut sugar, cinnamon, vanilla, salt and orange zest.  Mix together with your hands until well combined.

Step 5: Pit and chop your dates.  I like to work these into the batter by hand.  If your dates are hard, dry or otherwise non-fresh, you can soak them in warm water to soften them, and then blend them to create a date paste.

Step 6: At this point, if your mixture needs more liquid to enable it to hold together, add in some orange juice.

Step 7: Roll into balls, and then enjoy!
