Walnut Mushroom Vegan Taco “Meat”

We can’t wait to taco-bout how delicious this faux meat is! Made from walnuts and mushrooms (though you can use almost any nut or seed if you’re not a walnut fan), it has the texture and savory characteristics of ground beef. Next Tuesday, make a taco bar with hard and soft corn tortillas, avocado, cilantro, salsa, and fresh red cabbage slaw. Let the Taco Tuesday tradition begin!

Ingredients

1/2 – 1 jalapeno, seeds removed
3 cloves garlic, peeled
1Tbsp chili powder
1 cup mushrooms
½ cup walnuts
¼ cup pumpkin seeds
¼ cup sunflower seeds
Salt

Preparation:

In a food processor, process jalapeno, garlic, chili powder and a little salt until finely ground.

Remove from food processor into a large bowl. Add mushrooms into food processor and process until coarsely chopped.

Remove and add to the jalapeno mix. Add walnuts and seeds into food processor and process until finely ground.

Add into bowl with jalapeno and mushrooms.

Season with salt. Mix everything together and taste for seasoning. Serve on tortillas with your favourite taco toppings.
