Better than Fruitcake Overnight Oatmeal

The thought of fruitcake might bring you nightmares, but the truth is, the fruits and nuts in these festive loaves make for a perfect healthy breakfast. It’s time for a fruitcake revolution at the breakfast table! Include these classic fruitcake ingredients in your next bowl of overnight oats and you’ll sure to chase those fruitcake nightmares away.

 Ingredients

  • 3 cups water
  • 1 cup gluten-free steel cut oats
  • 2 Tbsp pineapple, dried
  • 2 Tbsp cherries, dried
  • 2 Tbsp pecans, chopped
  • 2 Tbsp agave nectar
  • 1 tsp cinnamon, ground
  • 1 tsp pure vanilla extract
  • 1 serving Vega One Nutritional Shake French Vanilla
  • ½ tsp rum (optional)

Preparation

  1. Bring water to a boil. Once boiling, add oats and continue to boil for 1 minute.
  2. After 1 minute, remove from heat and add the rest of ingredients and stir until well incorporated.
  3. Cover and let sit for 6-12 hours.
  4. Enjoy either at room temperature or slightly warmed* (on stove for best results).

*Note: If warmed, place desired amount into a small saucepan and warm on low heat. If oatmeal is too thick, thin with almond milk until desired consistency.
