Craving something chocolaty but don’t want to feel guilty for indulging? My Ultimate Chocolate Mousse is deliciously decadent but it’s also nutritious! Made with cashews; this chocolate mousse is packed full of fatty acids, fibre and protein. This is one chocolate treat you can feel good about eating. Oh Yeah!
Ultimate Chocolate Mousse
- 1 cup (250 mL) cashews
- ¼ cup (60 mL) cacao powder
- ½ tsp (2 mL) pure vanilla extract
- 1 tbsp (15 mL) honey (optional)
- ½ (125 mL) + 1 tbsp (15 mL) water
Soak the cashews in 2 cups (500 mL) water for 1 hour. After they have soaked, drain and rinse the cashews, discarding the water. Place the soaked cashews and the remaining ingredients in a food processor and blend. Add more water as needed until the mixture reaches your desired consistency. Store your mousse in a n airtight glass container in the refrigerator and consume within 3 days.
Power of Food Tip: Serve with fresh seasonal berries such as blueberries. You can also add, as a topping. 1 tbsp (15 mL) hemp seeds or ground almonds per serving to boost the flavour and nutritional value of cashews.
