Those late night ice cream cravings can put a real cramp in any clean eating plan, unless you have a healthy alternative you can indulge in without the gulilt. You can make this in a blendtec or ice cream maker, an ice cream maker will give it a thicker consistency.
1 cup canned coconut milk (full fat)
2 cups mixed berries (blueberry, strawberry, blackberry)
3 tbsp. melted cacao butter
3 tbsp. melted coconut oil
1 tbsp. vanilla bean
3 tbsp. honey or maple syrup
Instructions: Blend on high until smooth and pour into an ice cream maker, run until you reach a frozen consistency. Or, pop in the freezer for 30 minutes and enjoy.
