These superfood brownies are made from simple ingredients you may already have in your kitchen. Sweet potato, raw almond butter, maple syrup, cacao and vegan chocolate chips. No need to make things complicated with this recipe, simply blend, bake and indulge!

These are great eaten with coyo (coconut yogurt), crumbled on top of some vegan ice cream, or enjoyed straight out of the pan.

These brownies are an ideal recipe for kiddos as well. Parents, you need not worry about destabilized blood sugar levels, and the emotional mayhem that often ensues as a result. Hip hip hurray!

Smooth Almond Butter

While peanut butter has been a household favorite for years, almond butter has been getting recognition for its nutritional value and health benefits. Because of almond butter’s neutral, smooth flavor, it can easily be incorporated into recipes for baked goods, and also makes a great topping for toast, oats, smoothie bowls, and even salad dressings and sauces.

Almond butter is a great source of protein, which is essential for tissue regeneration and repair. It also supports cardiovascular health with its favorable fatty acid profile and plentiful fiber content – both of which have been shown to improve blood cholesterol levels.

Sweet Potato Benefits

After the sweet potatoes are peeled, cooked and mashed, they make the perfect plant-based, whole food substitute for eggs, butter, and sugar – all in one. Along with their versatility in baking, sweet potatoes offer an array of health benefits including providing half of the RDA for Vitamin C, and 400% of the RDA for vitamin A. These two vitamins also function as antioxidants to fight against cell aging and disease (use purple sweet potatoes for even more antioxidants!).

Sweet potatoes also contain manganese (⅓ of your daily need!), which promotes skin and bone health, B vitamins and minerals. They are anti-inflammatory, don’t spike your blood sugar and can help regulate your blood pressure.

Directions

  1. Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper.
  2. In a blender, add sweet potato, almond butter, maple syrup and cacao powder. Blend until a dough is formed. Stir in chocolate chips.
  3. Pour mixture into baking dish and level out with a spoon. Sprinkle with walnut pieces if desired. Bake for 20 minutes, or until a toothpick comes out clean when poked in the middle of the brownies.
  4. Allow to cool and enjoy!
