A truffle recipe so easy, anyone can whip these up in 10 minutes. Do you ever get dessert cravings and end up staring into your fridge wishing there was something easy and healthy for you to indulge in? Keep some of these truffles on hand, you won’t be disappointed. No oven, no dehydrator, no mess. Just a food processor and 5 simple ingredients is all you need. Want some variety? You can mix it up a little by adding other ingredients like cocoa, spirulina or dried berries to some of your truffles, or roll them in something else like coconut palm sugar, goji powder, spirulina or whatever you’ve got laying around your raw food kitchen.
Ingredients:
- 10 Medjool Dates
- 2 Cups of Real Dried Coconut Flakes or Chips(no additives, just coconut)
- 1/2 tsp. Vanilla Bean Powder
- 1 pinch of Himalayan Salt
- 2 tbsp. Grade B Maple Syrup
Instructions: Put all ingredients into a food processor and process until your mixture bundles up together into a tightly formed dough. Pull apart and roll into small truffle sized balls and pop in the fridge. Ready to eat in 30 minutes (or right away if you like them soft and warm).

I would love to share the measurements! I experimented in my kitchen for a friend recovering from cancer, she was craving sweet and spicy so I gave it a shot trying to get as many super foods in the mix as I could. They turned out amazing, the only downside was that she had to share
5 dates
1 Tbsp chia powder
1/2 cup almonds
1/2 walnuts
2 Tbsp cocoa ( you could sub with carob)
2 Tbsp coconut
2 Tbsp Hemp hearts
1 tsp cayenne
1 tsp turmeric
Start by putting the dates in the processor ( I have used both a vitamix and a food processor, they both do a great job), then add the nuts. Once they are mixed into a thick, lumpy past add the rest of the ingredients and mix until desired consistency. Roll into 1″ balls and chill ( I ate them out of the bowl… so the “chill” part is really just a suggestion).
Since making this version I have doubled the cayenne and turmeric and still loved it though my toddlers prefer the tamed down version. Also, I have added 2 dried apricots and it gave it a nice extra bit of sweetness.
