Nothing beats diving into a salad that not only tastes delicious but looks delicious. Let’s face it, food appeals to us through many different senses: sight, smell, taste and texture. You get all of that with this gorgeous high antioxidant salad!
And I say gorgeous for a reason. The antioxidants from pomegranates and blackberries offer your skin a super dose of nutrients that help fight wrinkles and premature aging. Plus, creamy avocado is full of Vitamins A, D and E, which help to moisturize your skin from the inside out.
Feel free to use your favorite salad dressing. I’ve used a simple honey-lemon dressing here, but you can go lighter on the honey as the fruit offers enough amazing sweetness.
- 2-3 cups mixed greens
- 1/2 avocado, sliced
- 1/3 cup cherry tomatoes, chopped
- 1/3 cup blackberries
- ¼ cup pecans
- Seeds from half a pomegranate
- 2 tbsp hemp or olive oil
- 1/2 lemon, juiced
- 1 tbsp local, raw honey
- Pinch of sea salt
Instructions: Whisk dressing ingredients together in a large bowl. Once fully combined, add mixed greens and cherry tomatoes to dressing and combine together. Place salad on a plate/bowl and top with sliced avocado, blackberries, pomegranate seeds and pecans.
Feel free to get a little creative and add your favorite nuts or seeds to the salad. Hemp seeds or pumpkin seeds would make a great addition due to their heart healthy fats.
