  • 4-6 large Collard Leaves
  • 1/2 cup Pea Shoots or Sprouts
  • 1/2 cup Purple Cabbage, shredded
  • 1 cup Quinoa, cooked
  • 1 cup Hummus
  • 1 cup Guacamole or Avocado

Instructions: Spread 1/4 cup of hummus and avocado onto each collard leaf. Add ½ cup of quinoa to each leaf. Fill with remaining ingredients, wrap and enjoy. Optional – Make 2-3 extra for lunch tomorrow.
