The best thing about summer (well one of them) is that mangoes come into season. Of course they’re delicious just as they are, but blended into smoothies or chopped up into awesome salads works extremely well too and shows just how versatile this fruit is.
This Mango Tomato Salsa Salad is fresh, tangy, crunchy, sweet and savoury all at the same time.
- 1 Medium Head Romaine Lettuce
- 2 Cucumbers
- 2 Tomatoes
- 2 Mangos
- 1 Lime
- 1 Mango
- 2 Tomatoes
- 6 Sundried Tomatoes
- Shred half the lettuce and use the other half to line your serving bowls with whole leaves. Dice the cucumbers and tomatoes and toss together with the shredded lettuce in a salad bowl. Peel and dice the mangoes and gently toss into the salad.
- Place the dressing ingredients into the blender and blend until smooth.
- Line your serving bowls with whole lettuce leaves, and spoon out the tossed salad over the top. Pour the dressing over the salad and serve with a squeeze of lime.
Serves 2 for a delicious summer meal!
